Has anyone in the UK received the over the air 2.3 update as yet? I sent the request email to VW and then received confirmation I was eligible. I have driven the car every day for the past fortnight, but nothing has appeared so far. The car is online and has 2 bars 4G outside my house.

I don’t see anywhere that says the software is 2.0, 2.1, 2.3 etc.? Plenty of other versions of software, but not that?

Nobody should need to request the update from VW, or request the car to make it happen.
VW approve the VINs, the cars poll once a week to see if there’s an update, if there is the car downloads it via the eSIM, and the user is offered the option to install it the next time they stop the car.
A member of the UK Facebook group volunteered to be in the initial batch of 15 or so customers to get the update as a test. The option to volunteer was given to First Movers, those who paid a deposit in 2019 and ordered their car in 2020 without having seen one.
